This proposal aims to establish a holistic, multidisciplinary approach, for the characterization and formulation of natural, bioactive compounds (polyphenols, with special focus on anthocyanins) as food supplements and/or nutraceuticals. These formulations will ensure maximal compound bioavailability and bioactivity, ensuring safe preventive interventions against age-related disorders, such as neurodegenerative diseases (NDs). Following the principles of circular economy, we aim to exploit vinification by-products for extraction of natural bioactive compounds with antioxidant, anti-inflammatory and neuroprotective properties.
