Spyros Didos is a Chemist with a Master’s degree in Food Science and Nutrition and a PhD candidate in the Department of Food Science and Nutrition at the University of the Aegean. He works as a research associate at the Institute of Applied Biosciences at the Centre for Research and Technology Hellas (CERTH) in Thessaloniki. His current research interests include the study of the biochemical and nutritional properties of foods and their bioactive components, with a focus on promoting Greek products and enhancing the Greek agri-food sector, as well as developing innovative approaches to improving the nutritional quality and safety of foods. Additionally, his research focuses on the use of microorganisms, isolated from foods and food industry waste, to combat foodborne pathogens.
