Irene Bosmali is a Food Technologist, MSc and PhD candidate at Aristotle University of Thessaloniki (AUTH), Department of Agriculture, Faculty of Food Science and Food Science and a great part of her PhD thesis was carried out at Institute of Applied Biosciences at National Centre for Research and Technological Development in Thessaloniki. Her current research interests include genetic variation using molecular markers, adulteration detection and DNA barcoding in plants and foods, as well as the enrichment of products with legumes increasing their nutritional value in combination with analysis of rheological and thermal properties, chemical composition, gelatinization and retrogradation properties of starch content, microscopic/macroscopic structure and starch digestibility, texture-appearance, protein and starch secondary structures, flavor profile and sensory evaluation.
